Basic Vanilla Cupcake Recipe

This recipe makes 12 cupcakes.

Ingredients

– 2 cups self-raising flour, sifted

– 3/4 cup caster sugar

– 3/4 cup milk

– 125g butter, melted, cooled

– 2 x 59g eggs, beaten

– 1 teaspoon Queen Natural Vanilla Essence

Method

1. Preheat oven to 200°C (180°C fan forced). Line cupcake tray with paper cases. Combine flour and caster sugar in a bowl. Make a well in the centre.

2. Add milk, butter, eggs and vanilla to flour mixture. Mix ingredients until well combined.

3. Spoon mixture into prepared muffin pan. Bake for 12 to 15 minutes, or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool.



Double Chocolate Cupcake Recipe

This recipe makes 12 cupcakes.

Ingredients

– 1 ½  cups self-raising flour, sifted

– ¾  cup caster sugar

– ¾  cup milk

– 125g butter, melted, cooled

– 2 x 59g eggs, beaten

– 1 teaspoon Queen Natural Vanilla Essence

– ½   cup cocoa powder, sifted

– ¾ cup dark or milk choc bits

Method

1. Preheat oven to 200°C (180°C fan forced). Line cupcake tray with paper cases. Combine flour and caster sugar in a bowl. Stir in cocoa powder and choc bits. Make a well in the centre

2. Add milk, butter, eggs and vanilla to flour mixture. Mix ingredients until well combined.

3. Spoon mixture into prepared cases. Bake for 12 to 15 minutes, or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool.

 

 

Chocolate Ganache Recipe

Ingredients

– 250g quality dark, milk or white cooking chocolate, chopped

– 1/3 cup cream

Method

Combine chocolate and cream in a heatproof bowl over a saucepan of simmering water. Stir until smooth, then remove bowl from heat.

Alternatively, place cream and chocolate in a heat proof bowl and microwave for 1 minute on medium-high. Stir well until the heat of the cream melts the chocolate. Set aside at room temperature to cool, stirring occasionally, until ganache is thick and spreadable.

 

 

 

Decorator’s Buttercream Recipe

Ingredients

– 250g softened butter

– 250g melted copha

– 750g icing sugar (sifted)

– 1tsp vanilla essence

– 1 1/2 tbs pavlova magic

– 1/4 cup of water

 

Method

– Add the melted copha to the softened butter and the vanilla essence and beat until creamed

– In a large bowl mix the icing sugar with the pavola magic

– Add the icing sugar mixture one cup at a time to the copha/butter mix

– Gradually add the water

– Beat for 10 minutes or until you reach a buttercream consistency

 

 

Oreo Buttercream Recipe

Ingredients

– 250g softened butter

– 250g melted copha

– 750g icing sugar (sifted)

– 1tsp vanilla essence

– 1 1/2 tbs pavlova magic

– 1/4 cup of water

– 250g of oreo cookies

 

Method

– Add the melted copha to the softened butter and the vanilla essence and beat until creamed

– In a large bowl mix the icing sugar with the pavola magic

– Add the icing sugar mixture one cup at a time to the copha/butter mix

– Gradually add the water

– Beat for 10 minutes or until you reach a buttercream consistency

– Crush the oreo cookies in a food processor until well crumbed

– Mix the crumbed oreos into your buttercream until well combined
